By Popular Demand:
1 small pie pumpkin
1 onion, chopped
2 T oil
1 lbs. ground beef
2 T soy sauce
2 T brown sugar
1 can sliced mushrooms or fresh equivalent
1 can cream of chicken soup
1 1/2 c cooked rice
1 can water chestnuts, 8 oz.
Cut off pumpkin & thoroughly clean out. In large skillet, saute onions and mushroom in oil until tender. Add meat and brown. Drain drippings. Add soy sauce, brown sugar and soup. Simmer 10 minutes. Stir occasionally. Add rice and nuts. Spoon mixture into pumpkin shell, replace lids, and put on a baking sheet. Bake 1 hour at 350 degrees.
